Description
Black Bean Salsa
(A Spring Carnival Favorite)
Ingredients
- 1 cn (15.5 oz) black beans
- 1 cn (15.5 oz) corn
- 2 medium tomato
- 1⁄2 red onion
- 1 green pepper
- 1 fresh jalapenos
- 1⁄2 c lime juice (fresh squeezed)
- 1⁄2 t cumin
- 1⁄2 t salt
- 1⁄3 c fresh chopped cilantro
- 1⁄2 t cayenne pepper
Instructions
Drain & rinse the black beans and corn.
Peel, chop & remove the seeds from the tomatoes
Chop the red onion and green pepper; finely mince the jalapenos.
Drain the vegetables well. Mix the lime juice, spices, herbs and olive oil with drained vegetables. Chill at least 1 hour for spices to absorb.
