Description

Black Bean Salsa
(A Spring Carnival Favorite)

Ingredients

  • 1 cn (15.5 oz) black beans
  • 1 cn (15.5 oz) corn
  • 2 medium tomato
  • 1⁄2 red onion
  • 1 green pepper
  • 1 fresh jalapenos
  • 1⁄2 c lime juice (fresh squeezed)
  • 1⁄2 t cumin
  • 1⁄2 t salt
  • 1⁄3 c fresh chopped cilantro
  • 1⁄2 t cayenne pepper

Instructions

Drain & rinse the black beans and corn.
Peel, chop & remove the seeds from the tomatoes
Chop the red onion and green pepper; finely mince the jalapenos.

Drain the vegetables well. Mix the lime juice, spices, herbs and olive oil with drained vegetables. Chill at least 1 hour for spices to absorb.
