Ingredients

  • 1 bag whole wheat pasta
  • 1 T canola oil
  • 1 medium yellow onion
  • 2 c diced eggplant (unpeeled)
  • 1⁄4 c water
  • 1 green bell pepper
  • 1 medium zucchini
  • 14 button mushrooms
  • 1 stalk celery
  • 3 large tomatoes (diced)
  • 1 1⁄2 T dried thyme
  • 2 clv garlic
  • 2 t dried oregano
  • 1⁄2 T salt & pepper
  • 1 hot sauce (to taste)

Instructions

Cook whole wheat pasta in boiling water(follow time recommended on pasta box) In a separate pan, saute 8-10 minutes: oil, bell pepper, onion, zucchine, eggplant, mushrooms, celery, garlic. Stir in everything but the pasta and cook on low heat for 15-20 minutes, stir occasionally. Fold in pasta, cook 5 minutes, and serve.
