Pastalaya
Ingredients
- 1 bag whole wheat pasta
- 1 T canola oil
- 1 medium yellow onion
- 2 c diced eggplant (unpeeled)
- 1⁄4 c water
- 1 green bell pepper
- 1 medium zucchini
- 14 button mushrooms
- 1 stalk celery
- 3 large tomatoes (diced)
- 1 1⁄2 T dried thyme
- 2 clv garlic
- 2 t dried oregano
- 1⁄2 T salt & pepper
- 1 hot sauce (to taste)
Instructions
Cook whole wheat pasta in boiling water(follow time recommended on pasta box) In a separate pan, saute 8-10 minutes: oil, bell pepper, onion, zucchine, eggplant, mushrooms, celery, garlic. Stir in everything but the pasta and cook on low heat for 15-20 minutes, stir occasionally. Fold in pasta, cook 5 minutes, and serve.
