Curried Rice with Fruit

Ingredients

  • 1 1⁄4 c chicken broth (low-sodium fat-free)
  • 1⁄4 c dried apricots (chopped)
  • 1⁄4 c dried cranberries
  • 1⁄4 c raisins
  • 1 t orange zest
  • 1⁄2 T curry powder
  • 1⁄2 T cumin
  • 1 c instant brown rice
  • 3 T fresh parsely (chopped)

Instructions

Combine all the ingredients except the rice and parsley in a medium saucepan and bring to a boil. Add the rice, reduce the heat, cover, and cook for 10 minutes. Sprinkle with parsley before serving.
