Description
Curried Rice with Fruit
Ingredients
- 1 1⁄4 c chicken broth (low-sodium fat-free)
- 1⁄4 c dried apricots (chopped)
- 1⁄4 c dried cranberries
- 1⁄4 c raisins
- 1 t orange zest
- 1⁄2 T curry powder
- 1⁄2 T cumin
- 1 c instant brown rice
- 3 T fresh parsely (chopped)
Instructions
Combine all the ingredients except the rice and parsley in a medium saucepan and bring to a boil. Add the rice, reduce the heat, cover, and cook for 10 minutes. Sprinkle with parsley before serving.
