Description
Peanut Butter and Jelly Cookies
Ingredients
- 3⁄4 c granulated splenda
- 1 large egg
- 1 t vanilla extract
- 1 c creamy peanut butter (trans-fat free)
- 1 t baking soda
- 3⁄4 c sugar-free jam (any flavor)
Instructions
Preheat over to 300 degrees. Line a baking sheet with parchment paper. Mix sugar substitute, egg and vanilla with an electric mixer on low for 3 minutes. Add peanut butter and baking soda. Mix on medium until dough comes together. Form dough into small balls and place on baking sheet 1 inch apart. Gently press your thumg into the center of each cookie to make an indentation. Fill each dent with 1/2 tsp jam. Bake until lightly browned on bottom, 12-14 minutes. Cool on a wire rack.
