Description
A mediterranean twist on pasta
Ingredients
- 4 handfuls of dried whole wheat pasta shapes (rotini, farfale, shells, etc)
- 1 pk spinach
- 1 cn artichoke hearts (quartered)
- 1 handful of capers
- 1⁄4 ct feta cheese
- 5 kalamata or black olives
- olive oil
- red pepper flakes
- 2 cloves fresh garlic
- fresh rosemary
Instructions
Additional Ingredients: 5-6 mushrooms, 1 can diced tomatoes, salt and pepper
Instructions:
1. Boil the pasta as directed on the package
2. While the pasta is cooking, saute 2 minced cloves of garlic in a tablespoon of olive oil until slightly browned.
3. Add in the entire package of spinach
4. Add the mushrooms (diced) and cook until the spinach is wilted.
5. Add can of diced tomatoes and spices.
6. Add in the can of drained artichoke hearts
7. Drain the pasta and add to saucepan with all the veggies
8. Toss in diced olives and a few capers.
9. Add red pepper, flakes, salt and pepper to taste.
10. Turn down heat, and just before serving add in the fresh rosemary
11. Top with some of the feta cheese.
Notes
You can use any sorts of whole wheat pasta you like...I think the shapes hold the sauce better but linguini or angel hair will also work. Also, feel free to add in whatever veggies you like!!!!!
