Wheat Pizza Dough by Heather Villaret

(makes two thick crust or four thin crust pizzas)

Ingredients

  • 2 1⁄2 c whole wheat flour
  • 1 c unbleached all-purpose flour
  • 2 pk dry active yeast
  • 1 t salt
  • 1⁄2 t sugar
  • 1 1⁄2 c water
  • 1⁄2 t olive oil

Instructions

Place flour, yeast, salt and sugar in mixer. While mixer is running, gradually add water and knead on low speed until dough is firm and smooth (about 10 minutes) Turn machine off. Pour oil inside bowl. Turn on low about 15 seconds to coat bowl and all surfaces of dough. Cover bowl with plastic wrap and let rise in warm spot about 2 hours. Punch dough down. Sprinkle flour or corn meal on work surface. Cut dough in half and roll out on floured surface.
